Day 5! Muffins :)!!!

     Day 5 started off great! Janette, one of my coworkers makes food for our Blairs Ferry location and today she chose to make Apple Cinnamon NON restricted muffins. I couldn't wait to get to work to give them a try.  I was like a little kid waiting for some candy as I saw her pull up to the building :)! They were just as good as I was hoping for. The recipe makes 24 mini muffins that means I could eat 12 of them! I felt like I was cheating.  I savored every single muffin and smiled with every bite. Okay, maybe I exaggerated a little, but they were delish. 
          Apple Cinnamon Muffins
*1 packet IP Crispy cereal (crushed up)
*1 packet NEW IP Apple Oatmeal...

*2 egg whites (beaten slightly)
*1 tsp baking powder
*1 tsp apple pie spice
*1/2 tsp cinnamon
*1 tsp vanilla
*1 TBSP spenda/stevia
*2 tsp olive oil
*2 cups shredded zucchini (water squeezed from zucchini)
* 2 or 3 TBSP water
Beat egg whites with baking powder, let this sit a minute to activate the baking powder. Crush cereal to powdery mix.
Shred or dice the zucchini, squeezing out as much moisture as possible. Mix crushed cereal, oatmeal and spices, splenda into the egg mixture.
Mix well. Stir in zucchini and add the water as needed. Use enough to be able to stir well and scoop into GREASED muffin tins.
You do not want it runny. Bake at 350* for 12-15 min, depending on your oven. When muffins have set up, with a few minutes left to cook, I sprinkled just a little of a stevia/cinnamon mixture on top of them and finished baking. Cool and eat. Serve with Walden Farms Apple Butter if desired.

     I had a few clients and then had a networking meeting at the new Butcher Block over my lunch. Prior to the meeting I looked at the menu and pre ordered. My plan was to swap 8oz of dinner protein to lunch and having a packet for dinner. The cobb salad looked like a good choice with a couple modifications. No avocado, blue cheese crumbles, bacon or croutons. After rushing to the meeting the waitress brought me the salad, my big smile quickly went away... NOOOOOOOOO, I wanted to cry as she set down the salad in front of me.  They took my order wrong and the only thing on the salad was avocado, bacon, blue cheese crumbles and croutons. So, I removed all the toppings and added oil and vinegar to the lettuce.  I have to remember that I won't die if I don't eat :( After my meeting I went back to the office and ate 2 cucumbers, a green pepper and BBQ soy nuts. Not quite what I was hoping for lunch, but that is okay. Food is for fuel, correct?
     Throughout the afternoon I drank a Blue-Cran Granata for my 3rd IP for the day. The BCG is one of 2 of our products that have Hydrolyzed collagen for the source of protein. Hydrolyzed collagen has lots of benefits. Improves hair, skin, nails and decreases the appearance of cellulite. Yes, it would be nice to drink 3 of these a day but, we don't recommend it because it only has 8 of the essential amino acids rather than 16 like our other IP products. So, I try to have the BCG or Raspberry Jello a few times a week. I took a picture of myself in bra and undies last week prior to the start of the and it was not pretty!!! I can use some help in the cellulite department!!! :)
     It was 7pm and I was hungry for some real meat! Robert said he had a surprise for me when I got home. Knowing him I never know what that means, it could be anything! When I walked in the door it smelled great. He prepared some low fat kielbasa with diced green, yellow, orange peppers, fresh mushrooms, minced onion and 2 slices of turkey bacon.  It was so good!!! I highly recommend this recipe!
     I know it has only been a few days but I already feel SO much better. I feel in control, I have more energy and I have no guilt with the way I'm eating. Before starting the diet again this time I was wishing that the weight would just fall off. I thought of a quote my Dad had referred to "crap in one hand & wish in the other, see what fills up faster" As the scale showed my wish didn't happen! I have to do the work for the results! I know I can do this and I will!!!
