Hi everyone! I hope you all had as good of day as I did! I am looking forward to the weekend. This weekend we are celebrating my Nephew's 3rd Birthday at an indoor water park. It will be so fun! I have 5 sisters and getting us all together is usually a chore, but when we are together it is one of my most favorite times. I am the luckiest girl to be blessed with 5 Best Friends (who are stuck with me forever ;)). This weekend I will not be blogging, but I look forward to Monday and getting to tell you all about it!
Here is my menu for 01-04-13...
Breakfast:
1/2 Cup Steel Cut Oats
1 whole Pear
240z of water with my Amino Acid Energy Powder
Snack:
Pure Protein Bar(Chewy Chocolate Chip)
Lunch:
Cottage Cheese with Tomatoes
Spinach
Red Peppers
Walden Farms Chipotle Ranch Dressing
Snack:
Plain Greek Yogurt with Strawberry Sugar Free Jello Packet to add flavor. (I used a 1/2 tbs) YUM!
Dinner:
*My disclaimer. I am not home yet. But I have everything laid out to make this recipe tonight. I had leftover ham from the holidays and I LOVE LOVE LOVE Brussels Sprouts. I have made it in the past, and it is wonderful!!! :)
1 head of cauliflower, cored, and flowerlettes cut into pieces.
1 lb of Brussels sprouts cut in half.
1/2 lb of precooked/smoked natural ham (approx) more or less if desired. Cubed.
4-6 tbsp of Coconut Oil.
Garlic powder and sea salt to taste.
Pepper (optional)
Melt Coconut Oil and pour over chunked cauliflower, halved Brussels sprouts, and ham in a large mixing bowl.
Spread it all out evenly on a baking sheet or glass baking dish. It roasts better the thinner you can layer it.
Sprinkle with garlic powder and sea salt.
Roast in oven for 30 minutes at 350. More or less time may be needed for optimal tenderness.

If you have never used coconut oil you should try it! I love it. Keep in mind it does have a low smoke point though. :)

Well I am off to cook dinner for my family, and have a night in playing with all the gifts we were blessed with over the holidays. Your recipe sounds awesome and I'm so glad you suggested the sprouts. I had never had one in my life (that I recalled) until a few months ago and I LOVE THEM too! I actually like to just steam them if I'm in a time crunch. Once again, I'm SUPER excited to get to maintenance! Thanks Lindsay! :)
